What should be created?
The Planetary Health Kitchen – Professional Edition is a practice-oriented training format for chefs that shows how plant-based, seasonal and climate-friendly cuisine can be implemented in the catering business in an enjoyable, economical and everyday way. The focus is on culinary practice. The participants develop and cook dishes that are convincing in terms of taste, can be implemented in everyday business and at the same time have a significantly lower environmental impact. This is not about renunciation or restriction, but about expanding the culinary repertoire. The focus is on creative, balanced and versatile dishes made from vegetables, legumes, tofu and grains, which impress in terms of taste with different preparation techniques and aroma components. Parallel to the practical work, it is taught which ingredients and decisions have the greatest influence on the climate impact of a dish — and how these findings can be concretely integrated into menu planning, recipe development and product selection. The format supports restaurateurs in Binz and Wiedikon in developing their cuisine in a sustainable way: culinary, ecological and economic. Why this project? The demands on the catering industry are changing. Guests increasingly expect offers that are both convincing in terms of taste and make sense in terms of health and ecology. At the same time, companies are under economic pressure and need solutions that are practical, efficient and operational. The Planetary Health Kitchen teaches precisely these skills and shows how dishes are created that inspire guests and at the same time contribute to reducing the environmental impact.
