What should be created?
The Planetary Health Kitchen Wiedikon is a practical cooking format for neighbourhood residents that shows how a healthy and climate-friendly diet can be implemented in everyday life. The focus is not on theory, but on practice: Participants learn simple, everyday recipes that can be easily implemented at home. At the same time, it is conveyed in an understandable way which decisions in our diet make the biggest difference — for our own health and for the burden on our planet. During cooking together, it becomes apparent which foods are particularly effective, why plant-based ingredients play a central role and how much individual decisions can affect the carbon footprint of a meal. This creates a tangible understanding of the most important levers of sustainable nutrition. The format combines culinary inspiration with concrete knowledge and enables participants to develop their own habits in a self-determined way — without sacrifice, but with enjoyment, competence and joy in cooking. The Planetary Health Kitchen thus contributes to the promotion of nutritional literacy in the neighbourhood and makes sustainable nutrition a practical and attractive option in everyday life. Why this project? Sustainable nutrition is quickly associated with renunciation, complicated recipes or compromises in taste. Terms like "plant-based" or "climate-friendly" don't automatically trigger anticipation — and tofu alone isn't a dish. This is exactly where the Planetary Health Kitchen comes in. It shows that enjoyable, plant-based cuisine that is suitable for everyday use is neither complicated nor restrictive. On the contrary: plant-based cuisine opens up a wide variety of tastes — with roasted aromas, spices, textures and natural umami, which is also found in ingredients such as mushrooms, tomatoes, legumes or fermented products. Sustainable nutrition is not perceived as a sacrifice, but as an expansion of one's own repertoire — enjoyable, accessible and effective at the same time.
