What should be created?
The problem: Nutrition causes up to 21% of consumption-related climate impact in Switzerland – one of the biggest levers in everyday life, but it is not visible on any menu. The solution: A simple CO₂ label on the menu – with a colour code and a specific CO₂ value per serving. No ban, only transparency at the decision-making moment for the guests. At the same time, the calculation tool provided to restaurants provides them with complete transparency and comprehensibility as to how the CO₂ value is calculated. Field studies in the UK, Sweden and Germany consistently show 1.5–5% reduction in meal emissions through CO₂ labels. The largest study (Lohmann et al., 2022, over 80,000 meal decisions) shows a reduction of 4.3% per meal. Over hundreds of meals a day and 365 days a year, this adds up considerably - with practically zero additional costs. Current status & Next steps: The project is already being implemented: Miso Bar Binz (directly in the pilot district) probably wants to use the CO₂ label soon. The calculation tool is based on the AGRIBALYSE database – open source and scientifically tested. The aim is to learn directly from the users in the neighbourhood, to improve the tool iteratively and then to expand the model.
